An amazing burger with seasonal vegetables that is a change from the traditional burger. Good surprise ! An industrial setting with homemade cuisine, everything is fresh. Reasonable price, perfect for a weekday lunch.

Good cuisine with good products, the only downside is the desserts that are really too sweet. There were 5 of us and the 5 desserts were really too sweet. The service is very good, we were received wonderfully. THANKS

Atypical place but very pleasant, the beers are excellent and the dishes are very good and well made. Quiz evenings and impromptu karaoke are not to be missed!

01/05/2024: Excellent cuisine, a master sommelier who explains the wines to you with passion and a friendly setting. Not to be missed if you pass through Castres!
09/04/2024: Very nice address in the city center of Castres! We eat magnificently there. Each dish as well as each wine served is in its place. We wanted to taste a good cassoulet and it was successful. Both fine and delicious, we loved it! To fill us? Three glasses of different wines discovered with a passionate commentary after each stage of the meal. What if you didn't know anything about wine? You can discover and learn to love wine in this restaurant. A real favorite 🙂

20/03/2024: Excellent restaurant, very good and plentiful. Very friendly waitresses
15/03/2024: First time I've come to L'Absynthe and not at all disappointed, I really liked it. Home cooking a treat, for us it was calf's head. Friendly, everything I like. We will come back.
