Restaurant very well located next to the Saint-Étienne car park.
Very calm atmosphere in the vaulted cellar, a little cold on arrival, probably because of the difference in temperature outside and in the cellar.
Discovery of very refined cuisine, everything is balanced and perfectly seasoned.
The service is top notch, everything is well explained.
We feasted.
Good value for money.

A great discovery! The mixtures of tastes, sometimes daring, are controlled and balanced. We enjoyed ourselves from start to finish, without a false note.
The wines are well selected, although a little expensive. Only one desire: to go back.

A wonderful discovery in the heart of Toulouse! The original menu seduced me, especially the dish "Cochon X3 with corn puree, smoked paprika guacamole and reduced juice", a real treat. However, the "Guinea Fowl Dumpling" was a bit disappointing. Although tasty, its tasting was hampered by the presence of bones, making tasting impractical. I suggest deboning the chicken for a smoother and more enjoyable experience. Despite this slight downside, I highly recommend this restaurant for its warm atmosphere and inventive cuisine.

Very nice discovery. Seasonal cuisine using fresh produce, dishes that are quite elaborate in terms of presentation. The flavors are excellent, the herb sorbet is astonishing and perfect. the service is very pleasant. a big thank you I highly recommend. exceptional value for money 🤩🤩

I'm not trying to downgrade the rating of this good restaurant so I'm giving it 4 stars.
But since it was recommended by Gault et Millau, I perhaps expected a little better.
Overall, the tasting menu is worth the detour, good surprises that twist and accompany the dishes wonderfully.
But I didn't fall in love with a particular dish.
For information, we took 2 tasting menus with my partner. In the end, a lack of cooking on the accompaniments of the main course (carrot and shallot too firm), a good sauce would have really been a plus.
Emulsions are good but sauces bring another dimension to a dish.
It was only a first experience in this restaurant.
And as I always say: you have to try a restaurant several times before you have a clear judgement.
Keep it up, it's worth it! 👊
