14/04/2024: Here is our experience of the Grande Symphonie Menu with its food and wine pairing. It should already be noted that the establishment is located in an Alsatian town characterized by its charm. Take the opportunity to visit it if you don't already know it. The establishment, draped in red and black, is bright and tastefully decorated. All this red may seem almost too much but it is not. The welcome is warm and taken care of by Mrs. Brendel. We avoid the few beautiful low beams, we arrive at our table where the menu was waiting for us. The concept of the establishment is lovingly described to us by Mrs. Brendel. Permaculture, local producers, everything is done so that the experience we are given is the fruit of local achievements and producers dedicated to the art of taking pleasure and passing it on to us. What is even more pleasant is that what she describes, she lives it and is able to talk about each of her producers and the selected products. Monsieur Brendel becomes the one who harmoniously links all these exceptional products. The Grande Symphonie menu: Beetroot, pike egg on plankton & horseradish Leek on the flame, convoluted juice with a spoon Snail between garden and forest Heliantis & truffle game Wild zander Ikejime & simple parsley Blue flame lobster, opus incertum Free-range veal on the embers, assorted cabbages Pumpkin, marigold & tangerine combination Oh birch! Curiosities at the end Everything amazed us but I remember 3 things: The pearly zander of infinite delicacy, the blue lobster which is certainly the only one to have traveled (in fact it was so pleasant that Mr. Brendel came to share a few words with us about this dish which is close to his heart), and the veal of memorable tenderness. The food and wine pairing is just perfect, offering us wines from the region, but also knowing how to surprise us. The service is orchestrated so that we have time to appreciate the moments of discovery. Mrs. Brendel will never stop, sometimes with a teasing humor, to watch over us and ensure that this experience remains engraved in our memories. I thank her again for the little attention at the end of the meal ;)
