However, your reputation has been partly built on the use of organic flours: today, there is no longer a dedicated display on sales sites and the answers given by your colleagues remain evasive on the subject. Can you clarify your position on the use (or abandonment) of organic flours in bread making?

First visit to this establishment, being in the profession, the merchandise in the window is tempting, it's increasingly rare to see that there are still enthusiasts of the profession, keep it up!!!

Very tasty products. The bread is sometimes too baked (burnt crust on the bottom), but delicious. The only downside is that the prices are quite high. Unfortunately, you pay for quality.

Best bakery in Metz, their einkorn bread is exceptional. There is a huge choice of bread with different flours. The prices are certainly a little higher but the know-how and the quality of the raw materials more than justify it. Their pastries are excellent. And to my greatest happiness, I work right next door.
