24/05/2024: Having discovered this restaurant 8 years ago, as a pastry apprentice for a CFA who had an apprentice in the restaurant, I was a bit disappointed by this return to basics after so many years.
Overall, we both had a great time: the flavors are always surprising, pleasant and subtle, all with impeccable presentation.
BUT.
I am disappointed that the restaurant has lost a little of its graphic touch compared to before: it was a restaurant where each dish looked like a dessert and used fruits and vegetables in a surprising way, and it has become a (very good) 'carte blanche' style restaurant. It's not serious at all, and doesn't detract from the intrinsic quality of the restaurant, but I found it a bit of a shame.
On the other hand, the service was very unpleasant: always nice to see that good restaurants give young people the opportunity to train, but when you pay so much for a restaurant, being rushed from the start to the end of the meal is very unpleasant . The plates were cleared as soon as they were empty, the penultimate was not even when the waiter's arm appeared between my partner and me, in the middle of a discussion, to be removed from the table. In the end, we had the impression of having to hurry throughout the meal, which is not great for a restaurant of this standing. But, once again, this in no way takes away from the sympathy and affability of the said servers: politeness and kindness were required. just a little too much stress which should not spoil the customers' meals.
In terms of cuisine, we were just disappointed by the dessert, which we didn't understand at all. Then there was obviously a problem with the pastry cream since it escaped from the cigar, and had to be retained by a rose petal to hide misery, which unfortunately does not escape my pastry chef's eye. In short, everything was good, except this dessert which overall was unworthy of the quality of the rest of the meal.
Thank you nevertheless for the meal, which was a very nice moment with my partner :) the restaurant has changed a lot in 8 years, which is normal, but it is not less good, it is just... changed :)
23/05/2024: exquisitely delicious food, prepared beautifully, surprisingly delightful textures all combined with excellent service.
When in le Marais—you must go!
